Cardamom plantations are like huge woodland gardens with bamboo-palm-like shrubs cover the grounds. At the feet of these shrubs, comes out clusters of green fruits. This perennial herb belongs to the same plant family as Ginger (Zingiberaceae) and exhibits much of the same warming quality
Cardamom pods are harvested between October and December. Capsules are dried directly under sunlight for five to six days or more. Frequent turning is done. Alternate method of drying would involve special hot houses at controlled temperature; this method is practiced to retain the green colour during storage.
The dried capsules are rubbed on wire mesh to remove the stalk and dried portion of flower from the capsules and then graded according to size by passing through sieves. The graded produce is stored in bags to retain the green colour during storage and also to avoid exposure to moisture.
